Meal Prep.

For some reason, probably allergies, I have been so tired this past weekend. I ended up falling asleep on the couch Friday night, woke up at 10 and went grocery shopping.

That is the time. Man, it was amazing. Dillons after 10 is practically empty.

Anywho, other than making a chicken crust pizza Saturday for lunch (which I will post about later) it went in the fridge until Sunday.

With our new workout, we also signed up for a meal plan with our trainer. I honestly never thought I would get tired of chicken but it’s happened.

Lots of chicken. Lots of rice. Lots of spinach and kale, blah blah blah.

I do love to cook though so on the weekend I like to mix it up. I still try to stick as close to the plan as possible, but just different. I wouldn’t survive eating the exact same meal every single day.

Sunday is when I did all of the meal prepping for this week.

I made so much chicken.

And sweet potatoes, one of the things I hate so I have been trying to find different ways to make them that I would like.

And Justin helped with the rice.

I’m just glad it’s all done which means my evenings during the week are free!
